Roasted Sweet Potatoes Recipe

Ingredients

  • 2 medium-sized sweet potatoes peeled and chopped into even-sized pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the sweet potatoes, olive oil, salt, pepper, cinnamon, and smoked paprika. Toss well to coat the sweet potatoes evenly.
  • Arrange the sweet potatoes in a single layer on the prepared baking sheet, making sure they are not too crowded. If they are too close together, they may not cook evenly.
  • Roast the sweet potatoes in the preheated oven for 20-25 minutes or until they are tender and lightly caramelized, stirring halfway through the cooking time to ensure even browning.
  • Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes before serving.
  • Garnish with chopped fresh herbs or a sprinkle of sea salt.
