Arrange the sweet potatoes in a single layer on the prepared baking sheet, making sure they are not too crowded. If they are too close together, they may not cook evenly.
Roast the sweet potatoes in the preheated oven for 20-25 minutes or until they are tender and lightly caramelized, stirring halfway through the cooking time to ensure even browning.
Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes before serving.
Garnish with chopped fresh herbs or a sprinkle of sea salt.
