Banana Bread Recipe Without Eggs

This banana bread recipe without eggs is a delicious, quick and easy baking treat. Made with ripe bananas, and a few pantry staples, this egg-free banana bread is moist, tender, and full of flavor.

Ingredients

  • 3 ripe bananas mashed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/3 cup vegetable oil or melted butter
  • 1/4 cup non-dairy milk such as almond milk, soy milk, or oat milk
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (180°C) and grease a 9x5 inch loaf pan.
  • In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, vegetable oil, non-dairy milk, and vanilla extract. Stir until well combined.
  • In a separate mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Mix well.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  • Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and serve the banana bread warm or at room temperature.
