Ingredients

  • Greek yogurt
  • Coconut milk

Instructions

  • In a mixing bowl, combine Greek yogurt, coconut milk, chia seeds, and honey. Mix well until the ingredients are fully incorporated. Cover the bowl with plastic wrap and refrigerate overnight, or for at least 4 hours.
  • In the morning, chop the pineapple into small pieces and mix with a splash of orange juice to add extra flavor. Set aside.
  • Toast the chopped nuts and shredded coconut in a dry skillet over medium heat, stirring occasionally, until golden brown and fragrant. This should take about 5 minutes. Remove from heat and set aside.
  • Once the yogurt mixture has set, give it a good stir. Divide the mixture into serving bowls.
  • Top the yogurt mixture with the chopped pineapple and sprinkle with the toasted nuts and coconut.
