Preheat the oven to 320°F (160°C).
Line a round or loaf baking tin with parchment.
In a saucepan, place the sugar, butter, fruit cake mix, and crushed pineapple, and heat until butter has melted.
Stir well and bring to a near boil. Remove from heat and cool.
Once cooled, add ginger powder, mixed spice powder, cinnamon powder, and baking soda into the fruit cake mix.
In a bowl, whisk flour, baking powder, salt, and eggs together until just combined.
Add the cooled fruit cake mixture to the batter, and mix well to evenly distribute the fruit.
Pour the batter into a round or loaf baking tin lined with parchment.
Bake for 50 to 60 minutes.
Cover the cake with foil for the last 15 minutes of baking time.
Remove from the oven and allow to cool before slicing and serving.
