Moist Fruit Cake

This Fruit Cake recipe is made with mixed fruit, crushed pineapple, and warm, comforting spices, for the ultimate traditional festive cake.

Ingredients

  • 2 cups all purpose flour
  • 2 ½ baking powder
  • ½ tsp salt
  • 2 eggs
  • 1 cup white sugar granulated
  • ½ cup butter
  • 1 lb fruit cake mix
  • 1 can crushed pineapple 14oz
  • 2 tsp baking soda
  • 2 tsp ginger powder
  • 1 tsp mixed spice powder
  • 1 tsp cinnamon powder

Instructions

  • Preheat the oven to 320°F (160°C).
  • Line a round or loaf baking tin with parchment.
  • In a saucepan, place the sugar, butter, fruit cake mix, and crushed pineapple, and heat until butter has melted.
  • Stir well and bring to a near boil. Remove from heat and cool.
  • Once cooled, add ginger powder, mixed spice powder, cinnamon powder, and baking soda into the fruit cake mix.
  • In a bowl, whisk flour, baking powder, salt, and eggs together until just combined.
  • Add the cooled fruit cake mixture to the batter, and mix well to evenly distribute the fruit.
  • Pour the batter into a round or loaf baking tin lined with parchment.
  • Bake for 50 to 60 minutes.
  • Cover the cake with foil for the last 15 minutes of baking time.
  • Remove from the oven and allow to cool before slicing and serving.
