Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons fresh ginger minced
  • 2 cloves fresh garlic minced
  • 1 tablespoon sesame seeds toasted
  • 2-3 green onions chopped (for garnish)

Instructions

The Marinade:

  • In a bowl, whisk together the pineapple juice, soy sauce, ketchup, brown sugar, minced ginger, and minced garlic.
  • Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour about 2/3 of the marinade over the chicken. Reserve the rest for later. Seal the bag or cover the dish and refrigerate until ready to use.

To Grill:

  • Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). Oil the grates to prevent sticking.
  • Remove the chicken from the marinade and discard the marinade that the chicken was in.
  • Grill the chicken for 6-8 minutes per side, basting with the reserved marinade during the last few minutes of cooking. Make sure the chicken is cooked through and has grill marks, and the internal temperature reaches 165°F (74°C).
  • Once cooked, remove it from the grill and let it rest for a few minutes.
  • Garnish with chopped green onions and toasted sesame seeds.
