I’m not the biggest fan of fruit cake, but I do know that I prefer it moist and almost crumbly, rather than dry and dense. I also don’t care much for burnt raisins in baked goods, so I always watch this cake closely while it bakes.

Easy Fruit Cake Recipe Ingredients

All purpose flour: I alternate between using all purpose and self raising flour when making this cake. If you do use self raising flour though, keep in mind you won’t need to add the baking powder and salt in this recipe.

Baking powder: Helps the cake rise while baking.

Salt: The combination of baking powder and salt allows the cake to rise in the oven.

Eggs: To bind all the ingredients and create a moist, thick cake batter.

Granulated white sugar: I used white sugar this time, but you can swap it out for light brown sugar if you like. It’ll also add some caramelized flavor to your cake.

Butter: A high quality baking margarine is a good substitute for the butter in this recipe.

Fruit cake mix: My ready-to-use fruit mix came with sultanas, raisins, candied citrus peel, and glazed cherries. Use your favorite combination, and add a variety of nuts if you like too.

Crushed pineapple: For added fruitiness that complements the fruit mix, and adds a slightly tart sweetness to the cake.

Baking soda: Also aids with aerating the batter to allow it to rise.

How to make the Best Fruit Cake : Step by step

Step 1: Prepare the Oven and Baking Tin
Preheat the oven to 320°F (160°C).
Line a round or loaf baking tin with parchment.

Step 2: Prepare the Fruit Cake Mix
In a saucepan, place the sugar, butter, fruit cake mix, and crushed pineapple, and heat until butter has melted.
Stir well and bring to a near boil. Remove from heat and cool.
Once cooled, add ginger powder, mixed spice powder, cinnamon powder, and baking soda to the fruit cake mix.

Step 3: Prepare the Cake Batter
In a bowl, whisk flour, baking powder, salt, and eggs together until just combined.
Add the cooled fruit cake mixture to the batter, and mix well to evenly distribute the fruit.
